Prepare beef, onions, ginger, garlic, and dried chili peppers.

Cut the beef into thin slices.

Add cornstarch, cooking wine, and appropriate amount of cooking oil.

Mix well with your hands and marinate for 10 minutes.

Shred the ginger, mince the garlic, cut the shallots into sections, and cut off the dried chilies.

Heat oil in a pan, add shredded ginger and minced garlic and sauté until fragrant.

Put the marinated beef into the pot and stir-fry quickly.

When the beef changes color slightly, peel it aside and add dried chili peppers and stir-fry until fragrant. When it is about to change color, add white wine, soy sauce and salt, and stir-fry quickly over high heat.
