Add appropriate amount of flour to the purchased pork belly and rub it evenly with your hands to remove the mucous membrane

After washing, soak in water with white vinegar for a while to remove the odor

Take it out and put it into the pot, add cooking wine and ginger slices and blanch them

Cook until hard, remove and rinse with running water

Put it into an electric pressure cooker, add cooking wine, star anise, bay leaves, dried chili peppers, and Sichuan peppercorns and press for 25 minutes

This is the pressed pork belly, take out and drain

Place in ice water to cool down
