Wash and prepare shrimps.

Wash and cut leeks into sections and set aside.

Wash and prepare the shrimp heads and set aside.

Remove the shrimp tails from the shrimp tails and cut the shrimp lines with scissors to facilitate the flavoring when marinating. Add ginger, light soy sauce, cooking wine, black pepper, and salt and marinate for 20 minutes.

Chop garlic, millet pepper, and ginger and set aside.
