Yam, cumin and coriander pancakes
Overview
Our family had another bumper yam harvest this year. People in my husband’s hometown have become rich by growing yams in recent years, so every harvest season, our family will have a lot of yams to eat until the beginning of next spring. Everyone on earth knows that yam is rich in nutrients, but there are not many ways to eat it. Today I tried making cakes with yam and it was really good.

Okay, it’s time to take it out of the pot. Crispy on the outside and crispy on the inside, delicious! This is the first time I made yam cakes. I did not crush the yam into puree, but chopped it and put it into the noodles. You can feel the particles of yam when you eat it, and it tastes good.
