  2. In another small bowl, add about the same amount of water as the egg mixture. The ratio of water to egg liquid can be between 1:1 and 1:1.5. It is better to use warm water. Add salt to the water and stir evenly to fully dissolve it. The salt can also be added when the egg liquid is stirred later. In order to make it more uniform, it is added to the water first.

  4. Now proceed to the process of eliminating air bubbles - sieving. Pass the egg mixture through a fine sieve, and the air bubbles will remain on the sieve

  5. The egg liquid that has been passed through the sieve will look like this. Gently blow off a small amount of air bubbles on the surface and it will be ok

  6. Add appropriate amount of soybean oil. The chicken cake steamed with soybean oil is golden and beautiful. If there is no soybean oil, you can add other vegetable oils. The color may be different, but it will not affect the taste.

  8. Here comes the crucial second process - buckling the plate. This will prevent the egg liquid from foaming during steaming. (If the mouth of the container holding the egg liquid is too large, you can cover it with plastic wrap. The effect is the same. It’s just more troublesome than buckling the plate. I’ve tried it.)

  9. Cover the pot and bring the water to a boil over high heat. Use medium heat and steam for 12 minutes. (You don’t need to worry about anything during the steaming process, such as opening the lid to release air, etc. These have already been solved by the process of buckling the plate.)
