Perfect Dorayaki
Overview
This is my second time making waffles, and the filling is dorayaki. This amount can fry 6 pancakes and add bean paste filling to make 3 dorayaki. Add the bean paste filling when it is hot, otherwise it will easily separate. When I first joined Meitian, I also made a waffle. I had no experience at that time and I was not very good at describing it. After several months of training and reading more recipes from fellow chefs, I feel more mature. This recipe is based on the recipe of Warm Blue. Thank you very much!

Prepare the ingredients, mix low-gluten flour and baking powder and sift them evenly;

Break the eggs into a mixing bowl, add salt, powdered sugar and honey and stir evenly with a hand whisk;

Add jade oil and milk, stir evenly;

Slowly pour the egg mixture into the sifted flour mixture in batches, and stir until no flour particles are visible;

At this point, the batter will be smoother and more delicate, and will not disappear immediately if it drips. Place it in the refrigerator for more than an hour to allow the baking powder to slowly take effect;

During this period, I made the bean paste filling and took out the batter from the refrigerator. The batter was relatively thick;

Use kitchen oil-absorbing paper to dip a little oil into the pan and wipe it without any oil stars;

Heat a non-stick pan over medium heat, place it on a damp cloth to cool down, and pour in about 70% of a rice spoon's worth of batter. The batter will automatically form a round shape;

Move the pot to the stove and heat it over low heat. Cover the pot and fry for about 2 minutes. Open the lid and you will see small bubbles forming in the dough. The batter will gradually turn from light to yellow. Turn over when it turns all yellow;

When the front is evenly colored, cover the pot and fry for about 1 and a half minutes before it is ready;

The color on the reverse side is also beautiful;

After the pancake is fried, place it face up on the grill rack to cool. If you put it on a plate, the steam will wet it.

Add bean paste filling while hot to make Dorayaki. The skin of Dorayaki looks smooth, delicate, and evenly colored without any pores. It looks like a baby's skin. I really want to kiss it!
