Imperial Concubine Chicken Wings
Overview
The very famous imperial concubine chicken wings. Concubine Yang liked to eat two things most in her life. The first one is lychee, and the second one is chicken wings. Inspired by Yang Guifei's drunkenness while drinking alone at Baihua Pavilion, the dish of Imperial Concubine's Chicken Wings was created. This dish is cooked with wine and has the charm of a drunken lady.

Chill the chicken wings, clean them and set aside

Put water, green onion and ginger slices into the pot, and add cooking wine. Add chicken wings and blanch them

Sprinkle the blanched chicken wings with a little white pepper and salt, and drizzle with red wine to taste

Heat the cold oil in a pan, pour in an appropriate amount of cooking oil, add onion and ginger slices, Sichuan peppercorns and rock sugar, simmer until the rock sugar dissolves
