Overview
Liangpi is my favorite. Although I can make all kinds of delicacies, I am a little scared when I need to wash my face to make Liangpi. Recently, a group of friends posted a good recipe for not washing your face. I modified it slightly and tried it. The taste is not inferior to the method of washing your face. Even after making and eating it several times, I am still not satisfied with it, so I would like to share with you this super simple Shaanxi Liangpi.

Put all the flour, water, salt, and starch into the container, stir in one direction with chopsticks, pause for a few minutes, and stir again. Repeat a few times and the batter will be very smooth. It will take more than 10 minutes to accumulate the mixing time, so that the batter will become chewy and the cold skin will be chewy. It is best to leave the batter for 1-2 hours. After it settles, pour out about 10 grams of the top layer of water and stir again.

Since I don’t have a rollo to make cold dough, I used a pizza pan instead, but it’s easy to use. It’s best to switch between steaming and other metal pans.

To make spicy oil, heat the salad oil, let it cool slightly, then pour it into a bowl where you have put the chopped chili peppers in advance. You can make more at one time and eat it several times,

Add water to a large pot and bring to a boil. Brush the pizza pan with a layer of oil with a silicone brush. Scoop an appropriate amount of batter with a spoon, cover it, and heat it for 3-5 minutes. You can cook it directly in water or put it on the steamer.

If the surface is smooth and the color darkens, it is ready.
