Overview

The pig's trotters with ginger are crispy and delicious, and are topped with a sauce made from appetizing and digestible ginger plus light soy sauce and other seasonings. Have materials ready.

Wash the pig's trotters and chop them into pieces. Boil water in a pot, add ginger slices and cooking wine, cook the blood foam, and scoop it up.

Refill a pot of water, add pig's trotters, ginger slices, green onions, salt, take a piece of sand ginger and put it down and cook together for about half an hour. If you like it softer, cook it longer and pick it up after cooking. Keep two bowls of pork trotters soup for later use

Rinse the cooked pig's trotters with cold water and let it cool for later use. (It would be better if you have ice cubes. Soak the pig's trotters in cold boiled water for a better taste.)

Smash the ginger into flat pieces and chop into small pieces.

Cut the onion into small pieces.

Add oil to the wok and stir-fry the fragrant ginger.

Pour in some of the soup you just used to cook the pig's trotters, add four spoons of soy sauce and salt (test it yourself, if the taste is strong, add more)

Add the onions and sauté for about two minutes.

Pour the fried ginger sauce over the pig's trotters and sprinkle with coriander.
