Spicy fried clams
Overview
During the summer vacation, I went back to my parents' home with Xiao Geng. The clams in the market were very cheap, only five yuan a pound, and you could pick them at will. They were big and fat. This is impossible in Shanghai. Knowing that Xiao Geng loved to eat these, my mother bought them more diligently. Different from the ones I just stir-fried with green onions and ginger, this kind of spicy fried clams was obviously much more flavorful!

Prepare the ingredients.

Chop all green onions, ginger, and dried chili peppers.

Heat oil in a pan, add onions, ginger, dry cooking wine, and Sichuan peppercorns and stir-fry over low heat until fragrant.

Add clams and stir-fry over high heat with cooking wine.
