Prepare the raw materials, remove the internal organs of the squid and wash it, cut the squid body into half-centimeter-wide strips with a diagonal cutter, and cut the squid tentacles in half. Chop onion, ginger, pickled pepper and other seasonings. (I forgot to take a photo. I remembered to take a photo after I cut the vegetables for cooking)

Blanch the squid in a pot, add cooking wine and green onions to remove the fishy smell.

Drain the squid and then fry it in the pot to dry up the water to prevent the oil from exploding.

Heat oil in a pan, add pickled peppers, ginger, green onions, Sichuan peppercorns, bean paste, etc. in sequence. Stir-fry until fragrant, add the blanched squid and stir-fry for 1 minute. Add onions and stir-fry for another 3 minutes. Add Sichuan pepper powder, cumin powder, salt, and MSG to taste, and serve.
