Clean the chicken breasts, remove the white chicken fat, tear off the fascia, and pat it with a knife.

Cut into long strips and then cut into 1cm cubes.

Add egg white, light soy sauce, cooking wine, starch, and salt for half an hour.

Heat the oil in the pan.

Add the marinated chicken, fry over high heat until slightly white, take it out quickly, let it cool, continue to heat the oil, add the chicken, fry over low heat until red and crispy, take out, drain the oil and set aside.

Chop onion, ginger, garlic, Sichuan peppercorns, Sichuan peppercorns, and chili peppers. Prepare a small handful each.

Leave the bottom oil in the pot and heat it up over high heat. Add Sichuan peppercorns and fry until cooked. Add dried chili peppers, minced onion, ginger and garlic. Stir-fry the fried chicken over high heat until slightly dry.
