Wash the chicken feet and blanch them in water to remove any floating residue and set aside

Heat oil in a pot, add onion, ginger, pepper and star anise, stir-fry until fragrant

Add chicken feet, cook in cooking wine, stir-fry, add dark soy sauce and light soy sauce, stir-fry until coloured,

Stir-fry until the color is even, add an appropriate amount of salt and sugar, stir-fry until the sugar melts

Add appropriate amount of water, bring to a boil over high heat, and simmer over medium heat

When the soup is almost dry, add chicken essence

Turn to high heat to quickly reduce the juice
