It’s Chinese New Year, and there must be fish on our New Year’s dinner table, which means there will be more than enough every year! The meat of mandarin fish is tender and has few spines. It is sealed and grilled with tin foil, which locks in nutrients and moisture. Therefore, the grilled fish meat is salty, fresh and juicy. Coupled with the caramel aroma and sweetness of the sweet potato, it is really enjoyable to eat it in your mouth! (Sweet potatoes can also be replaced with potatoes or lotus root slices)

Take a mandarin fish, clean it and drain it with kitchen paper, spread it evenly on the fish with a little salt, and marinate it briefly. Chop the onions, ginger, and garlic, and peel the sweet potatoes.

Fry the cut sweet potatoes in the oil pan until the browned edges appear, remove and control the oil. At this point preheat the oven to 200 degrees.

Mix the steamed fish soy sauce, dark soy sauce, oil, cooking wine, bean paste, pepper oil, salt, sugar, and pepper, dilute with a little cold boiled water, and make a bowl of juice for later use. This step is up to your own taste.

Line a baking bowl with tin foil, brush oil on the tin foil, and place onion rings.

Put the mandarin fish into a baking bowl, pour in the prepared bowl sauce, put the fried sweet potatoes on top, and wrap the fish with the tin foil next to it.

Place in the middle and lower rack of the oven at 200 degrees for about 25 minutes. The baking temperature and time are for your reference. The actual operation needs to be adjusted according to your own oven.
