Cut the pork belly into small pieces and prepare the spices

Wash the dried mushrooms and soak them in water

Blanch pork belly in cold water

Put a little oil in the pot, add the blanched pork belly and stir-fry over low heat to release the oil

Add ginger slices, spices and rock sugar and stir-fry

Add cooking wine, light soy sauce and a little dark soy sauce and stir-fry until browned

Add the water in which the dried mushrooms were soaked

Add the soaked dried mushrooms and simmer over medium-low heat for about 45 minutes

Stew the pork belly until tender and reduce the juice over high heat
