Bean paste cake
Overview
The puff pastry is stuffed with red bean paste. When baked, the aroma fills the room. After it came out of the oven, I couldn't wait to eat one. Ah, it was so crispy and fragrant. The bean paste filling inside was soft and sweet when I took a bite. It was combined with the pastry and brought to my mouth. The two merged with each other. It was really a delicious thing.

Steps
-
Preparation of water-oil skin: raw materials include all-purpose flour, sugar and butter.
-
Once the butter has softened to room temperature, mix it with the flour.
-
After adding sugar and water, knead into dough.
-
Knead the dough with the heels of your hands to fully incorporate the flour, butter, water, and sugar.
-
The kneaded dough is relatively soft, wrap it in plastic wrap and put it in the refrigerator for 20 minutes.
-
Production of puff pastry: The raw materials include butter, all-purpose flour, and corn starch. (I didn’t have low-gluten flour, so I mixed all-purpose flour and cornstarch into low-gluten flour).
-
After the butter has softened, mix with the flour and knead well with your hands.
-
The kneaded pastry is delicate and soft.
-
Take the water-oil dough out of the refrigerator, divide it into small doughs of about 16 grams, and cover them with plastic wrap. .
-
The pastry is also weighed, divided into small balls of about 12 grams, and covered with plastic wrap.
-
Shape the dough into a round shape, put the pastry in, gently push it up with the thumb of your right hand, and pinch the closing edge tightly.
-
(I changed the plastic panel so that it will not stick to the panel during operation). Gently roll out the small dough into a long strip.
-
Then fold it from top to bottom, fold the lower part from bottom to top, then gently roll it out, fold it again, and then roll it into a large dough piece. Roll it out three times in total.
-
(I forgot to pat the bean paste filling), divide the bean paste filling into 20 grams each, then roll it into a round shape, take out one bean paste filling and put it into the puff pastry, wrap it up like a bun, then arrange it into an even round shape, and make the remaining dough.
-
Preheat the oven to 180 degrees with upper and lower heat. Apply egg liquid (I used whole eggs) on the outside of the bean paste cake, then sprinkle with black sesame seeds. After preheating, put it in the oven, bake with upper and lower heat to 180 degrees, and bake for 40 minutes. The surface will be golden and ready to be baked.
