Overview
Bird's Nest Silk, Zigong's innovative famous snack, was founded in 1965. In August 1990, it won the Sichuan Flavor Snack Award. The raw materials for making Zigong bird's nest silk are flour, sugar, lard, cherries, candied fruits, etc. With exquisite craftsmanship, the fermented dough is mixed into silk strips, rolled into bird's nest silk, and steamed in a cage. It is characterized by soft foam, uniform strands, sweet and refreshing taste. Bird's nest shreds are different from ordinary pasta rolls in shape, seasoning and taste, and have become a new specialty in pastries. It is not only used as a snack at banquets, but also becomes a favorite breakfast among the masses and is praised by guests at home and abroad.

Add a small amount of warm water to dissolve the yeast, pour it into the flour, then add water and sugar, and knead it into a soft dough. Let rise in a warm place until doubled in size.

Cut the honey cherries and winter melon strips into fine pieces

Sprinkle some dry flour on the board, knead the fermented dough to remove the air, roll it into a rectangular shape with a rolling pin, and roll it out thinner

Melt lard in water and brush evenly on the dough

Roll up the dough slowly

Flatten the rolled dough slightly and cut into chopstick-thick strips

When you have cut into 8 to 10 strips, hold both ends with your hands and pull them to three inches long

Flip with your left hand, pressing the right side against the left side

Roll it up again, press the joint underneath, and press it in the middle with your thumb to form a bird's nest shape.

After everything is done, put it in the basket, cover it and let it rise for about 30 minutes

Put the awakened bird's nest shreds into the pot, boil the water and steam over medium heat for about 15 minutes. After turning off the heat, let it simmer for 5 minutes before opening the lid.
