Prepare thick and thin chilli noodles.

White sesame seeds, peppercorns, cinnamon bark, bay leaves, star anise, cumin powder and salt.

Wash the coriander, mushrooms, garlic, ginger and chives and set aside.

Cut mushrooms into cubes and slice ginger.

Mix the coarse chili powder, salt, sesame seeds and cumin powder in a small bowl.

Let the appropriate amount of burned oil cool down and mix it with the chili noodles evenly, so that when the hot oil is poured in later, the chili peppers will not be burned because the oil temperature is too high.

Pour oil into the pot, heat the oil to 60% heat and put in the coriander, mushrooms, garlic, ginger, chives and all the seasonings.

Turn to low heat and fry all seasonings and accessories until browned.

Use a slotted spoon to remove all seasonings and accessories, leaving only the oil.

Don't pour the hot oil directly, turn off the heat and let it cool for 30 seconds, pour it into the bowl in two batches, and stir quickly with chopsticks (sprinkling the hot oil in batches will make it more fragrant and less likely to burn).

Pour it all in the second time. It is best to have more oil to cover the spicy pepper.
