Fried rice with pickled cabbage, mushrooms and eggs
Overview
Yesterday I asked everyone in the group how much weight they had gained, and they all said they had gained a lot. However, I felt relieved. Haha, I still eat meat during the Chinese New Year, so I inevitably lost my appetite and suddenly wanted to eat something light. Although I am a carnivore, I was actually afraid, so I made myself an appetizing fried rice. It was just a matter of minutes and seconds. I added some sauerkraut to appetize, so I share it with you

Ingredients
Steps
-
Prepare some Northeastern sauerkraut [you can buy it online, if you can’t pick pickled cabbage, anything else will do], a piece of lean meat, three mushrooms, and two eggs
-
Cut the lean meat into small dices. If you find it difficult to cut, you can chill it first and then cut it to make it easier
-
Put the diced lean meat into a small bowl, add a little soy sauce, pepper, cornstarch, and cooking oil and marinate for a while
-
Wash the sauerkraut with water, squeeze out the water with your hands, and cut into fine pieces
-
Same as above for shiitake mushrooms
-
Chop the garlic and ginger into small pieces, and cut the white part of the green onion into small pieces
-
Beat the eggs
-
Heat a pot over low heat, add a little oil, pour in the egg liquid, and fry into shapes
-
Then use a knife to cut the eggs into small pieces
-
Re-wash the pan and add oil, add chopped ginger and garlic and sauté until fragrant
-
Add sauerkraut, minced mushrooms and continue...
-
A quarter spoon of chili sauce, any other sauce - [as long as you like it] stir well
-
Add overnight rice [If you want the grains to be distinct, it’s best to leave them in the refrigerator for half an hour before frying]
-
Pour in the chopped eggs
-
What I want to say here is to be careful when adding salt, and don’t shake your hands. The chili sauce in front is salty
-
Stir thoroughly and it's ready to serve
-
If it doesn’t taste good, come to me

. I particularly like Haruki Murakami’s words: Don’t be too entangled in the present, and don’t worry too much about the future. There is no useless experience in life. After you have experienced something, the scenery in front of you is no longer the same as before. There are no people who like loneliness, but they don’t like disappointment. Everyone has their own sad things. Maturity is just good at hiding it, and vicissitudes of life are just the absence of tears and hurts.
