First, beat the egg whites and egg yolks separately into two clean basins that are oil-free and water-free

Add milk and vegetable oil to egg yolks and mix well

Add Xinliang cake flour to the evenly mixed egg yolks and stir with a manual egg mixer until there are no dry powder particles. [Remember not to stir in circles, just make zigzags to stir]

Stir the egg yolk batter evenly and set it aside for later use. At this time, you can reserve the oven at 200 degrees in advance

Add the fine sugar to the egg whites in three batches and beat until 80% fluffy. Lift the egg beater until it has a small curved hook

Add one-third of the meringue into the egg yolk batter and mix gently with a spatula

After mixing evenly, pour the egg yolk paste into the remaining meringue basin and continue to mix gently evenly

Pour the prepared cake batter into a baking tray lined with greaseproof paper and use a spatula to smooth the surface

After scraping it flat, lift the baking pan and shake it gently twice to remove the bubbles. Place it in the middle rack of the preheated oven at 180 degrees for 20 minutes until the surface is lightly colored. [I like a more tender cake embryo. If you don't like it, you can bake it for a few more minutes. Just check the degree of color on the surface and don't overbake it]
