I bought fresh crucian carp from the market. The size is based on the number of people in my family. I bought it for two people today. Wash the purchased crucian carp, and the black stuff inside the fish belly must also be washed, so that the fish meat will be more delicious.

Cut the green and red peppers into rings, chop the onions, ginger and garlic and set aside.

Heat the pot, put more oil in the pot than usual for cooking (rapeseed oil is better), heat the oil and add an appropriate amount of salt and chopped ginger (this is to prevent the fish skin from sticking to the pot), then put the fish in and fry until the fish skin is soft and tender. When the fish meat tightens, turn it over and fry the other side (don't turn it over often, it is best to turn it once, so that the fish will not have a fishy smell). After frying, pour cold water into the pot that covers the fish body. Remember not to add water several times. The water must be added all at once, otherwise the fish will have a fishy smell.

Cook over low heat for ten minutes (put dark soy sauce, oyster sauce, cooking wine, aged vinegar and a little chopped chili into the pot during cooking). Then put a little salt in the pot and add the chopped green and red peppers and garlic. Just turn the fish once while cooking.

Cook on low heat for ten minutes, then turn to high heat to reduce the juice, then remove the fish and put it on a plate, leaving the soup in the pot. Take a small bowl and pour a small amount of cornstarch and water to boil, then pour the prepared cornstarch water into the soup in the pot, add the chopped green onion and stir-fry for a few seconds, and pour the soup over the fish. This delicious braised crucian carp is ready. Prepare the white rice. You will eat two big bowls because it is too much to eat, haha!
