Mix the ingredients for the oil dough together, knead it into a dough, and place it in a warm place to ferment (cover the surface with plastic wrap or a damp cloth). Oil dough: 115g ordinary flour, 15g vegetable oil, 25g maltose, 50g water, 1.5g quick dry yeast

Ferment for about 1 hour until the volume doubles

Squeeze the air out of the dough with your hands, then let it rest for 15 minutes

Mix the pastry dough ingredients together and knead into a dough.

Flatten the rested oil dough with your palms

Place the puff pastry dough on top of the puff pastry dough

Wrap the pastry dough completely with oil dough.

Turn the wrapped dough downwards, flatten it with the palm of your hand, and roll it into a rectangular shape with a rolling pin.

After rolling it out, fold the two ends of the rectangular dough piece in half along the center line.

Fold it in half again along the center line (similar to the steps we take when folding a quilt in the morning). Let the folded dough rest for 20 minutes

Re-roll into a rectangular shape

Repeat steps 9 and 10, folding in quarters again. (A total of 2 times of 40% off).

After folding in 40%, roll it into a rectangular shape again

Cut off the corners of the rolled dough into a neat rectangle.

Brush a layer of egg wash on the surface of the dough sheet.

How to make puff pastry: Mix melted butter and plain flour evenly, then knead into fine grains with your hands. Pastry dough: 60g cornstarch, 30g butter, 4g salt

After brushing with egg wash, wait for 2 minutes until the surface of the dough becomes sticky, then sprinkle the puff pastry evenly.

Use a knife to cut the dough into strips about 8CM long and 1CM wide.

Pinch up both ends of the small strip, twist it into a spiral shape, and place it on the baking sheet. Leave a certain distance between each strip. After everything is placed on the baking tray, let it rest for 15 minutes, then bake in a preheated 160-degree oven.

In the middle layer of the oven, turn the heat up and down. Bake at 160 degrees for 8 minutes, then lower the temperature to 150 degrees, change to high heat, and continue baking for 5 minutes. Take it out of the oven when the surface is golden brown. I have a Changdi CK25D oven.
