A super tempting German-style pudding tart. I made a glutinous matcha mochi-flavored filling, soft and tender pudding fillings, and a fragrant and crispy tart crust. After one bite, it was so crispy that it fell into pieces, filling your mouth with a sense of happiness!

Let's make matcha mochi first. Mix 50 grams of glutinous rice flour, 10 grams of corn starch, 20 grams of white sugar, and 3 grams of matcha powder together.

Add 80 grams of milk and mix evenly.

Stir until smooth and without any lumps, then serve for steaming.

Steam in hot water for about 15 minutes. Use chopsticks to poke the bottom and there is no slurry liquid.

Place the steamed mochi in a bag, add 5 grams of butter or 5 grams of vegetable oil, and knead until smooth and no longer sticks to your hands.

Next we make the tart crust, using 50 grams of unsalted butter that has been completely softened at room temperature and whipped slightly first.

Sift in 50 grams of powdered sugar.

Whip until the color becomes lighter and the volume increases.

Add 40 grams of whole egg liquid in 4-5 batches and beat evenly.

Remember to add egg liquid after beating evenly every time.

Sift in 150 grams of low-gluten flour.

Mix well first with a spatula.

Then knead it into a ball with your hands and set aside.

Divide the dough into 6-7 even pieces.

Put the dough into a paper cup, press it into a shape that fits the paper cup, and set it aside for later use.

Divide the mochi evenly into 6-7 portions.

Place into prepared tart crust.

Then prepare the pudding liquid, mix 80 grams of whipping cream, 80 grams of milk, 30 grams of condensed milk, and 2 egg yolks, and mix them all evenly.

Sieve twice to remove large air bubbles.

Pour the pudding liquid into the tart shell.

Preheat the oven to 180°C in advance and bake for about 30 minutes.
