A bread recipe worth thousands of dollars that once took the internet by storm: Old Fashioned Bread (Bread Machine Version)
Overview
There was a time when the old-fashioned bread recipe of "Love and Freedom" was popular on the Internet for a while. Almost everyone who played baking was handing in homework to Ziyi. The recipe was really good and the bread made was delicious. It was said that the recipe was worth thousands of silver. We were so lucky to use it for free. We are so lucky. Thank you to Love and Freedom. I have made the oven version of [old-fashioned bread] many times and it has never failed. What does this mean? The recipe is good. This time I used a bread machine to make it, and it was successful in just one try. I am very satisfied with the appearance and taste. The original recipe uses a mixture of high-gluten flour and low-gluten flour to make small buns. This time I used a bread machine to make the toast because I was afraid that the low-gluten flour would affect the effect, so I changed it to high-gluten flour. The finished product worked very well. Thank you again for the love and freedom of the recipe. Each bread machine brand, performance, and power are different, so you still need to make some adjustments based on the characteristics of your own machine. You don't necessarily have to follow my method, unless your machine is the same as mine. I also welcome friends who like to make bread machine toast to communicate with me more. We can learn from each other's strengths and make bread machine toast that is both internal and external.

Ingredients
Steps
-
Put all the starter ingredients into the bread machine (150 grams of gold powder, 12 grams of fine sugar, 4.5 grams of yeast, and 120 grams of water). Use chopsticks to stir until there is no dry powder to avoid splashing of dry powder when starting the machine.
-
Start the machine's 'dough kneading program' and knead the dough for 2-3 minutes. Just mix the ingredients evenly for the starter, then stop the machine, cover the lid, and allow natural fermentation.
-
Ferment until the dough is honeycomb-shaped. The room temperature at my house is about 20 degrees and the fermentation time is about 2.5 hours.
-
Keep the starter in the machine and add the main dough ingredients directly. First add the liquid part, namely egg liquid and water.
-
Then pour sugar and salt into 2 different corners of the machine.
-
Finally pour in milk powder and flour.
-
Use chopsticks to stir the ingredients first to prevent dry powder from splattering when starting the machine.
-
Start the machine's 'Kneading' program, knead the dough for 15 minutes, then stop the machine and proceed to the next step. Then select the 'Standard Bread' program of the machine, choose 'Light' for the baking color, and weigh 900 grams. The whole process takes 3:15 minutes to set the default for the machine. Start the machine and start working. The kneading time of the standard bread program is 30 minutes by default. When kneading reaches 15 minutes, stop the machine and check the dough. A thin film can be pulled out.
-
At this time, add room temperature softened butter, start the machine and continue kneading the dough.
-
Continue kneading for 15 minutes. The entire kneading stage is over. Including the additional 15 minutes of kneading, the total kneading time is 45 minutes. Check the dough and you can easily pull it out of the glove mold.
-
The surface of the kneaded dough is smooth, delicate, and non-sticky. Cover the machine lid and proceed with the first stage of fermentation. At this time, the machine displays 2:45.
-
When the fermentation reaches 1:49-1:48 minutes, the machine will have a 1-minute mixing and exhausting process. You can pause the machine at this time and reshape the dough. If you want to be lazy and not reshape the dough, don't worry about it and just let the bread machine do the second rise and bake. After the exhaust and mixing are completed, stop the machine, take out the dough, and divide it into 4 equal parts without letting it rest.
-
Sprinkle some flour on the cutting board or apply some oil on your hands, and roll the dough into a long strip.
-
Connect the two ends of the noodles and twist 2 times into a twist.
-
Tuck the connecting parts into the circle.
-
Take out the mixing rod from the bread machine barrel, put the shaped bread dough into the bread machine barrel, and try to roll the four doughs to the same size and tightness, so that they will not be uneven in height when baked. Close the lid, end the pause, and continue working. The bread machine will do the rest of the work for secondary fermentation until the baking is completed.
-
After the baking is completed, the machine will give a 'beep' prompt. Immediately brush the surface of the bread with melted butter, then take out the bread and brush the sides with melted butter. This will make the crust of the bread much softer and allow it to cool completely on the grill.
