First turn the king crab over, and then use scissors to disarm the king crab. One trick is to start along the joints of the crab, which is the soft part where the body and legs are connected in the plastic bag in the picture. This saves effort and is easy to cut. I first cut off the six legs and two pliers, and then processed the crab body.

It's just that it's a little difficult to open the crab body. First, lift up the crab lid a little between the crab lid and the butt, then put the scissors in and cut off the connection inside the crab lid. You can easily separate the body and crab lid. Cut the body into pieces, and then go back to the crab legs. Again, cut each leg into two sections along the crab leg joints, and then use scissors to cut the crab legs in the middle. This will make it easier to eat.

This season is better now, and the crabs are quite plump. Then you can dig out the crab roe from the crab butt and throw it into the crab lid. Then beat a few duck eggs, add some rice wine to remove the fishy smell, add some salt appropriately, put it into the crab lid and stir, so that the eggs and crab roe are fully mixed. Steam the crabs in a pot first. Because the crabs are relatively large, they are steamed three times, each time for about 10-12 minutes. Then the crab lids are steamed for about 15 minutes before they are ready to eat.

If possible, drain the crab legs before steaming. This prevents the plate from being filled with water after steaming, which will affect the taste.

After the eggs are steamed, sprinkle with chopped green onion and finish eating one crab and two.
