Overview
I am honored to enter the finals of Xinliang's first baking competition. It is also full of happiness for me. Mooncakes symbolize reunion and put all the happiness and contentment into the basket. This is the meaning of happiness. I wish everyone a complete success.

This recipe is divided into two parts, one is bread and the other is mooncakes. Because mooncakes need to be oiled, you can make mooncakes first. First of all, I would like to thank Xinliang Company for sending various powders, which can meet my various needs. I will use bread flour and Cantonese mooncake powder for this work.

Pour the inverted syrup, peanut oil and soy water into a basin and mix. Use an egg beater to stir thoroughly until evenly emulsified.

Pour in the flour and stir with a spatula to form a dough.

Cover with plastic wrap and let rest for more than two hours.

The ratio of mooncake skin to filling here is 1:1, because my family prefers mooncake skin, and the filling will not be too sweet with this ratio. The five-nut filling is kneaded into a 25g ball, and a few green and red threads are added. Traditional five-nut mooncakes must have green and red threads.

Take 25g of dough and roll it out, add the kneaded five-nut filling, wrap tightly and shape into a ball.

Put the dough into the mold and press out patterns on the baking sheet.

Spray a small amount of water on the surface, use a mist spray bottle, put it in a preheated oven, and bake it at 180 degrees for five minutes to set it.

Take it out and brush it with a thin layer of egg wash. It must be a thin layer. If you brush it too thickly, the pattern will disappear.

Put it in the oven again at 180 degrees for twenty-five minutes, until the surface is slightly colored.

Take out the baked mooncakes and let them cool down completely. The freshly baked mooncakes are too hard to eat and don’t look good. It will take about two days for the mooncakes to be sealed and oiled until they become beautiful.

After packaging, I waited for the oil to return. The waiting process was so impatient.

Now start making the bread basket. Put all the bread ingredients except butter into the bread bucket. Put the liquid ingredients first, then the flour and yeast powder, and start a kneading process.

Once the dough is smooth, add butter and continue kneading until fully expanded.

Place in bread machine for fermentation.

Ferment until doubled in size.

Divide the dough into two parts and flatten to deflate.

Roll out into long pieces.

Cut into strips with a knife.

Take a basin, cover it with tin foil, and braid the noodles into rice characters.

Then take a strip and circle it around the word "rice", and weave it one by one.

Take three more noodles and braid them into braids to make the handles of the basket.

No need for secondary fermentation, just put it in the oven at 18 degrees Celsius for 15 minutes.

Unmold the baked basket while it is hot.

Put the mooncakes into the basket, and also put happiness in it.

The mooncakes haven't even returned to oil yet and I can't wait to use them to take photos. The beautiful and delicious basket carries a lot of reunion, and I feel happy instantly.
