Fried snails
Overview
Most of the snail recipes online are spicy, but there are elderly people in my family who don’t like spicy food. The cooking here in my hometown is mainly braised, so this stir-fried snail recipe is based on thick oil and red sauce. Speaking of snails, when I was a child, I spent a summer vacation catching snails by the river. At that time, my father took long sick leave and was often hospitalized. The burden of life fell entirely on my mother's shoulders. In order to supplement the family income and add some nutrition to my father, my mother took my sister and me during the summer vacation to run around the rivers in our hometown and use push nets to catch snails. My mother was the main force, responsible for pushing the net in the river. After raising the net, she dumped the contents on the riverside. The two of us picked up snails from the water plants, stones, and sand. After returning home, I pick out the big ones and sell them, and eat the small ones myself.

The stall owner who sells snails will help cut off the tail of the snails. After buying them, wash off the sediment on the surface, put them in clean water, add a few drops of sesame oil, and let them sit for a long time, which will cause the snails to spit out small snails. Clean again before frying.

Finely chop onions, ginger, green onions, and dice dry red peppers. Heat the pan, add oil, and sauté the onions, ginger, and dried red peppers.

Add the snails and stir-fry for a while.

Add all the seasonings, add a little water, cover and bring to a boil, taste and adjust.

Remove the juice over high heat.
