Put the elbows in a pot with cold water, add cooking wine, boil, skim off any blood foam, and cook the elbows thoroughly

Remove the remaining pig hair and rinse it again

Red brine soup with onion, ginger, star anise, pepper and fennel

Put the cleaned elbows into the stewed soup. If the soup is not enough, add water to almost cover the elbows

Add cooking wine, bring to a boil over high heat, then simmer over low heat until the elbows fall off the bones

Take out the elbow and put it into a steaming plate. Shave off two bones. Pour four spoons of stewed soup into the steamer and steam for about an hour

Add two ladles of stock to the pot and bring to a boil

Add water and starch to thicken the soup, and pour the soup over the elbows
