Wash and dry the bream, and apply a thin layer of cornstarch on both sides

Heat the oil pan over high heat, put the bream in and fry

Change to low heat and fry, fry one side and then flip the other side. Try to keep the skin of the fish from breaking, and fry until both sides are golden

Mix light soy sauce and dark soy sauce, add appropriate amount of black pepper, salt and chicken essence to make a sauce

Place a piece of foil on a baking sheet, put the fried fish on top, and pour the prepared sauce evenly over the fish

Stuff ginger slices and onion knots into the belly of the fish

Cover with tin foil and bake at 220C for 20 minutes
