Spinach braised meatballs are a must-eat in winter

Our local specialty stir-fry is also a dish with a very high serving rate of vegetarian dishes in winter. Almost all farmhouse restaurants will have this dish. It uses fresh and tender spinach in winter and cooks it with fried vegetarian meatballs. The spinach is sweet and fragrant, and the meatballs are very delicious. The locals only eat spinach in winter, and this dish is almost invisible in other seasons. Although spinach can be bought all year round, in our local area, winter spinach is the most delicious. Spinach grown in a cold environment has a sweet taste, a soft texture, and no astringency at all. It is one of the most delicious winter green leafy vegetables. Every time I go to the vegetable market, I look for the kind of spinach that is not tied up and packed with soil in a big basket. Every time I buy it, it is a big bag. This kind of spinach that has not been washed and processed can be left home naturally and can be eaten for several days without going bad. You can make stir-fries, soups, and stuffings (pancakes) no matter how you eat them. Adding a plate of meatballs makes it even more popular.

Prepare spinach and meatballs. This is what I call loose spinach. You can tell by their appearance that they grow freely. They have thick, short stems and fat leaves. They taste fresh and sweet, and are super delicious.

Prepare dried chili peppers and ginger slices, and you can also add some crushed garlic.

Pour oil into the wok. Don't wait until the oil is too hot. Add the dried chili peppers and crushed ginger and garlic. Later, add the meatballs and stir-fry. Add the meatballs first to heat them up. You can add the spinach to the pan later to avoid frying the spinach too much.

Then put the spinach, add a little water and mix evenly. Keep the fire high, the spinach will soften quickly, and the meatballs will be translucent after a while.

Season with a little salt and light soy sauce, mix well and serve.
