Prepare ingredients.

Clean the blood from the duck and chop it into large pieces.

Boil the duck meat in cold water, add a little white wine and ginger slices for 3 minutes.

Rinse the duck meat in cold water to remove any foam.

Heat oil in a pot over low heat, add rock sugar and boil until brown.

When the sugar turns slightly yellow.

Add a spoonful of bean paste and stir-fry out the red oil.

Add duck meat and stir-fry until browned, add ginger, cinnamon, star anise, bay leaves, and dried chili until fragrant.

Add half a can of beer, bring to a boil over high heat, cover the pot, and simmer over low heat for 25 minutes (adjust accordingly according to the age of the duck).

After the time is up, turn to high heat to drain the soup.

Add rice wine, chicken essence and oyster sauce to taste.
