Wash the hairtail and cut into 5cm long sections.

Coat in egg wash and fry until golden brown.

Put a little cooking oil into the pot, sauté the onion and ginger until fragrant, then add the fried hairtail.

Pour hot water into the pot, add salt, cooking wine, sugar and dark soy sauce and simmer for 15 minutes.

Just sprinkle a little pepper when serving.
