Make the medium dough first. Mix all the Chinese dough ingredients, knead into a smooth dough, and refrigerate overnight

Take out the medium seed and tear it into small pieces. Mix with the main dough ingredients and knead until the film is completely formed

Let the dough ferment at room temperature for about an hour until it doubles in size without shrinking

After the basic fermentation is completed, the dough is divided into three equal parts, deflated and rounded, then rested for 15 minutes

Roll the rested dough into an oval shape, roll it up, pinch the seams tightly, and put it into the toast mold

The bread is fermented for one hour, and the mold is about 80% full (my oven has a fermentation setting, and it is fermented directly in the oven)

Place in a preheated oven at 180°C, lower the rack, heat up and down, cover with tin foil after 10 minutes, leave for about 45 minutes
