Cut the herring into small pieces and soak in water for about 1 hour to remove some of the salty taste. Drain and set aside

Heat the oil in the pan, sauté the onion, ginger, garlic and chili until fragrant, add the fish and stir-fry until slightly browned, pour some cooking wine to remove the fishy smell.

Stir-fry for a while, add a little dark soy sauce, an appropriate amount of sugar, and boil water until the juice is reduced.

Plate it and serve it, even better with a bowl of fragrant white rice porridge!
