Cut half of the chayote into thick strips.

Cut the soaked black fungus into thick strips, and cut the red pepper into diagonal strips.

Heat an appropriate amount of oil in a pot, stir-fry the scallions and peppercorns until fragrant.

Add black fungus, shredded chayote, and red pepper.

Pour in half a spoonful of boiling water and stir-fry for a minute or two.
