One soft-shell turtle;

Use scissors to cut it into several pieces;

Score the surface of the mushrooms with a knife;

As shown in the picture;

Put the onion, ginger and garlic into the pot, add a little oil and sauté over low heat until fragrant;

Add turtle pieces and mushrooms and stir-fry;

Add oyster sauce, light soy sauce, dark soy sauce, seasoning and color;

Add a little water, cover the pot and simmer for a while;

Put the rice into a casserole, soak it in water for about 1 hour, bring to a boil over high heat and then turn to low heat;

Boil until there is no more water;

Add the turtle pieces (you don’t need to put the skirt and carapace in, just eat them directly) and mushrooms, pour in the sauce, and break in an egg, cover the pot and continue to simmer for about 5 minutes;

Simmer until the eggs solidify into runny yolks, then add a piece of green cabbage and it's done.
