Wash the sub-ribs and cut them into small pieces. Marinate them with a little salt and cooking wine for a while. Add a small amount of egg white, starch and flour to make a thicker batter. Add vinegar, sugar and some starch to make a thickening sauce.

Coat the sub-ribs evenly with batter

Heat the oil in a pan and fry the sub-chops over low heat

Fry until golden brown on both sides and fragrant, take out of the pan

Turn up the heat and fry the sub-chops for 1 minute and take them out

Leave a little oil in the pan, add tomato paste and stir-fry

Stir-fry until the tomato sauce turns red, then add the prepared thickening sauce. Stir-fry until the sauce thickens. Add in the fried sub-chops and stir-fry quickly to make the gravy evenly coat the sub-chops
