Prepare the ingredients: a bag of bamboo shoots, a bag of wild wild pepper, and an appropriate amount of Thai pepper.

Remove the moisture from the bamboo shoots bag and wash them.

Remove the old roots and cut into sections.

After the water boils, add the bamboo shoots and blanch them for half a minute.

Remove and cool, squeeze out the water.

Add salt, a little sugar, two spoons of light soy sauce, two spoons of rice vinegar, Thai peppercorns, garlic slices and a bag of wild pepper, mix well and marinate for more than 2 hours.
