Roasted Pork with Dried Beans

Soak the dried beans in advance and cut them into small pieces (the softer the beans are, the shorter the cooking time will be, otherwise the longer the cooking time will be)

Pork belly slices

Pour an appropriate amount of oil into a dry pan, add ginger slices or minced ginger, a small star anise, crushed garlic and sauté until fragrant, add a small piece of rock sugar, pour in the pork belly, a small amount of salt, cooking wine, and dark soy sauce and stir-fry.

Stir-fry the pork belly until the oil becomes translucent, add in the dried beans

Stir fry and add dried chili segments

Pour in enough water to cover the dried beans (the amount of water depends on how soft you soaked them earlier), and bring to a boil

Cook until the juice is reduced, add appropriate amount of salt, light soy sauce, pepper, chicken essence, oyster sauce, stir-fry a few times and serve.

The dried beans are cooked so soft that they go well with rice, and the pork belly feels like it melts in your mouth.

You can add some red pepper shreds to dress up the color.
