Slaughter the Qingyuan chicken, wash and drain.

Rub salt all over the chicken's body and belly.

Hang it to air dry or take a larger container like I did and place it on a chopstick stand to drain.

Add water to the pot, bring to a boil over high heat, add the whole chicken (stuff 2 slices of ginger and 2 sections of scallions into the chicken belly), cover and steam over medium-low heat for 20-25 minutes.

Take out and let cool. Cut into pieces and serve.

Can be dipped in soy sauce or scallion and ginger oil. (How to make onion and ginger oil: Chop the onion, ginger and garlic, add hot oil, then add soy sauce)
