This dish is very popular in our restaurant, but the recipe is different from mine. I didn't find the recipe of this dish in the food world, so I can only prepare this dish based on my own ideas and contribute it to everyone.

Prepare two purple eggplants. Use the thinner ones. If they are too thick, they will not be cooked easily.

Cut the eggplant into pieces as shown in the picture. When cutting, use one knife to cut straight and the other to cut diagonally. Cut an oblique opening to facilitate putting the meat filling inside.

Chop the pork into a meat filling, stir it into a meat filling with green onion, ginger powder, five-spice powder and a small amount of salt.

Place the meat filling into the diagonal opening of the eggplant. After it is finished, it will look like the picture.

Put oil in a pan, put the stuffed eggplants into the pan and fry over low heat without turning. You can cover the pan and simmer for a while until the meat fillings are cooked, then take it out and put it on a plate.

Finally, put oil in the pot, add onion, ginger and garlic and sauté until fragrant, add soy sauce and water starch to make a sauce and pour it into a plate.
