Cold Chicken Gizzards
Overview
I went home during the Chinese New Year and my sister-in-law made a cold dish in the evening. I didn’t think much of it at the time because I had never eaten chicken gizzards before. But then I tasted it and found it was quite delicious. So I asked my sister-in-law how to make it, and I just happened to make it and eat it today.

I have washed all the ready-made chicken gizzards I bought from outside. I must remove the yellow inner membrane of the chicken gizzards I bought from outside and wash them several times with water. After all, they are the internal organs of animals, so you can rest assured if they are clean!

Put cold water in the pot, add peppercorns, aniseed, five-spice powder, cooking wine, light soy sauce, oil, and salt. Put the chicken gizzards in the pot under cold water and bring to a boil over high heat.

After boiling over high heat, turn to low heat and simmer for 20 minutes.

Cook for 20 minutes, turn off the heat, and simmer for 10 minutes.

While the chicken gizzards are cooking, cut the cucumber into shreds.

Remove the chicken gizzards and drain them into cold water.

Cut chicken gizzards into thin strips according to texture

Add light soy sauce, sesame oil, cooking wine, cold vinegar, oil, salt, and chili oil, stir evenly, and place on a plate.
