Crack the eggs into a mixing bowl, add salt, cooking oil, and beat. Beat until completely mixed.

Add the sifted flour (I learned from baking, it must be sifted to make it easy to beat evenly), add the same amount of cold boiled water as the egg liquid, and beat evenly. Please be patient in this step and beat until smooth and grain-free.

Add chopped green onion, rice and stir briefly.

Heat the pan, add a small amount of oil and moisten the bottom of the pan.

Pour in the egg liquid, spread it evenly, and use minimum heat throughout.

After the surface has set, turn over.

Remove from pan and cut into pieces. (The lighting in the kitchen is not strong😥)
