Black sesame sauce cinnamon rolls
Overview
Because black sesame seeds have high nutritional value, as a chef at home, you naturally have to find ways to eat more. I often like to use black sesame seeds to make black sesame sauce, but because the color of black sesame sauce mixed with rice and vegetables is not good-looking, I often put it into pasta. Today’s flower roll is one of the ways to consume black sesame paste. Moreover, cinnamon powder is added. I personally think that cinnamon powder and sesame paste go well together and it tastes very good. This Hanamaki is my family’s private pasta. I brew my own rice wine and grind my own sesame paste. It’s quite private, haha. The steamed buns made with rice wine fermented dough taste particularly good, much better than those made with yeast powder

To make your own rice wine, take out the required amount of water and stir evenly

Add about 200 grams of flour and stir into a thick paste

Ferment until honeycomb-shaped and about doubled in size. Fermentation takes about 6 hours at room temperature of about 20 degrees. If it is lower than 20 degrees, it will take a day. If it is 25--30 degrees, it usually takes about 4 hours.

Pour the remaining flour into the fermented batter and mix into a harder dough

Continue to ferment at room temperature. Because there is fermented batter, the dough will usually rise in about 3 hours at about 20 degrees, and it will ferment until it is about 2 times in size.

Add salt and cinnamon powder to the black sesame paste

Mix well

Knead the fermented dough until smooth and roll it into a 3-4 mm thick piece. Spread sesame paste evenly

Roll up and cut into sections, cover with a drawer cloth and continue to let it rise for about 20 minutes.

Steam over high heat for 30 minutes
