  1. The green radish grown in my own small vegetable garden is not too big and is very crispy. It is also sweet when eaten without being spicy. Prepare a pot and use two radishes today to pickle spicy radish strips.

  2. Remove the top and tail of the radish, clean it, and cut it into strips according to your favorite texture. No need to peel it. The skin of the radish is also very crisp and the green color looks very appetizing.

  3. Sprinkle some salt on the cut radish strips and mix well. If you like it saltier, add more salt. The amount should be determined according to your personal taste.

  4. Add an appropriate amount of salt and mix well. Marinate for more than 12 hours. A lot of water will come out. Then take out the radish strips, squeeze out the water, put them in a mesh bag, and press it with a heavy object, such as a jar filled with water or pressed with a stone. Press it for about 24 hours to squeeze out the remaining water. The pressed radish strips will basically no longer produce water. Take out the pressed radish strips, peel and wash the garlic, crush it with a garlic clipper, peel the ginger, wash and chop it finely. The Sichuan-flavored chili oil I used is the chili oil package inside the Akuan red oil dough purchased online. It has a spicy taste and is very fragrant.

  5. Add the minced garlic and ginger to the radish strips, add an appropriate amount of cooked white sesame seeds, sugar, soy sauce, balsamic vinegar (the ratio of soy sauce to balsamic vinegar is 2:1), chili oil, and 1 tablespoon oyster sauce;

  6. Stir evenly and have a taste. If you like spicy, sour and sweet flavors, you can add more sugar and vinegar. The mixed radish strips can be eaten directly. Marinating them longer will make them more delicious. After stirring evenly, if you can't finish it in one meal, you can put it in a glass jar. If you pickle a lot, you can put it in a jar and refrigerate it. It will be fine for half a year. You can take it out and eat it anytime you want, which is very convenient.
