Wheel Puffs
Overview
Paris-Brest wheel puff is a pastry originating from France. It was inspired by the Paris-Brest-Paris cycling race. To commemorate this race, the pastry chef made this shape that looks like a bicycle tire, hence the name. In fact, I have wanted to make this wheel puff for a long time, but it is said that making puffs is difficult, so I have never dared to start. I suddenly became interested today, so I prepared the ingredients and prepared myself for failure. Haha, but in the end I succeeded once and for all. It was really exciting.

Prepare the necessary ingredients

First bring water (or milk), salt, 3g of fine sugar and butter to a boil and then turn off the heat

Pour in sifted low-gluten flour

Turn off the heat until a thin film appears on the bottom of the pot

Find a bowl of suitable size, dust the mouth of the bowl with flour, and place it on a non-stick baking sheet

After preheating the oven to 175 degrees for 5 minutes, place the baking sheet on the lower shelf (large oven on the middle shelf) and bake for 30 minutes

Put 15g of white sugar into the light cream and beat it
