Shaanxi Liangpi
Overview
There has been a lot of rain this year. At the beginning of the rainy season, we have experienced several heavy rains and torrential rains. It has been stopping and raining for the past few days. Although the temperature is not high, the air humidity is very high, which makes people feel uncomfortable. I was at home after work today. It had been raining since the morning. After breakfast, my son went to study for homework. I simply cleaned up the room and then figured out what delicious food to make for him at noon. I originally wanted to make dumplings, but I looked outside. With the light rain falling on my face, I stopped going out to buy vegetables. I looked for two cucumbers at home and thought about how to make good use of them. Then I thought of Shaanxi Liangpi, which is also my son's favorite, so I started to do it right away, otherwise it would be too late. Although the vegetables are very simple, my son is very satisfied with them...

Ingredients
Steps
-
Knead the dough into a medium soft and hard dough and let it rest for 30 minutes
-
Add two large bowls of water to the basin, put the dough in the water, and start washing the dough, washing it with your hands.
-
Pour the washed batter into another clean basin and continue to add a small amount of water to wash the face.
-
Wash it about 3-5 times, the water will be very thin, and it’s ready
-
Filter the completely washed batter.
-
Set aside the filtered batter and let it sit for 3-5 hours. If it's hot, put it in the refrigerator.
-
Wash the gluten, steam it in a pot for 20 minutes, cut it into small pieces, and mix it with the cold noodles to eat. However, we didn’t eat it this time and fed it to another family member, the stupid policeman, otherwise he would really salivate.
-
After 4 hours, slowly pour away the water on top of the rested batter. You don’t have to pour it completely, but leave a little, and then use a spoon to mix it into cold skin batter (Sorry, I forgot to take a photo of this step, I only remembered it when I started steaming). This is to brush the cold skin with a layer of cooked oil.
-
Pour a spoonful of batter into the gong and shake gently to make the batter even
-
Add half a pot of water to the pot and bring to a boil, add gong gong, cover and steam for 2-3 minutes
-
After the cold skin has bubbles, take it out and put it in a basin of cold water to cool. At this time, put the other gong into the pot to steam.
-
Peel off the cooled cold skin
-
Brush each layer of steamed cold skin with cooked oil and stack them up to prevent them from sticking.
-
After everything is steamed, take a piece of cold skin and cut it into wide strips
-
Put it into a plate, add cucumber shreds, pepper oil, vinegar, hot sauce, pour on the prepared sesame sauce, and sprinkle with a little cooked sesame seeds.
