Colorful fruit tart
Overview
In spring, all kinds of fruits are on the market. I have always wanted to make fruit tarts. I happened to have an extra box of whipped cream when making cakes at home, so I made fruit tarts, which fulfilled my wish. In this sunny spring, have a colorful fruit tart, paired with a cup of strong coffee, and enjoy the wonderful time of afternoon tea...

Ingredients
Steps
-
Tart crust materials; 100g low-gluten flour, 60g unsalted butter, 1 egg yolk, 1g salt, 15g fine sugar, 15g water
-
egg yolk, cut the butter into cubes without melting it, and put it into the low-gluten flour
-
Knead it with your hands until it becomes granular
-
Add 15 grams of water and mix thoroughly, knead into a dough, cover with plastic wrap and refrigerate for half an hour
-
Take out the dough from the refrigerator, roll half of it into a slightly thicker dough (if the dough feels a little sticky when rolling out, you can sprinkle a little flour)
-
Then put it into the baking pan and use your hands to shape the tart shell close to the wall of the baking pan
-
Use a rolling pin to roll it off the baking sheet and cut off the excess dough
-
Once everything is done, use a fork to poke holes in the bottom to allow the air to escape during baking
-
Put a piece of oil paper on the dough and put the beans (this will prevent the bottom from swelling when baking)
-
Put it into the preheated oven and bake at 190 degrees for 15 minutes, then take out the beans and oil paper and continue baking for about 10 minutes. (When baking, pay more attention to the coloring of the tart shell. If you feel that the color is heavy, you can cover it with tin foil)
-
When baking the tart crust, prepare the ingredients for the cream sauce: 100 grams of milk, 25 grams of fine sugar, 1 egg yolk, 5 grams of low-gluten flour, 5 grams of cornstarch, and 70 grams of light cream. Decorative fruits: 1 mango, about 16 small strawberries, half a box of blueberries, 1 kiwi
-
Mix the cake flour, starch, egg yolk and half of the milk together and mix well
-
Use a hand mixer to mix well, then add the remaining milk and mix well
-
Sieve and pour into the milk pot
-
Heat the mixture over medium-low heat until it boils, stirring constantly, until it turns into a thick paste. The custard sauce is ready. Place it in the refrigerator for later use
-
Take out the baked tart shell and let it cool for later use
-
Brush the bottom of the tart crust with melted butter (this will prevent the sauce from quickly seeping into the tart crust and keep the tart crust crispy)
-
Whip the light cream until it has obvious texture
-
Add custard sauce and mix well
-
Put it into a piping bag and pipe it evenly on the tart shell
-
Finally, add the fruit decoration, and the colorful fruit tart is ready. Enjoy the deliciousness...
