Spicy fried chicken gizzards
Overview
I often eat chicken offal in my hometown. There are very few good ones in Beijing, and the portions are also small. I’m afraid it won’t be washed clean, so it’s better to make it at home.

Wash chicken gizzards with white vinegar, wash and slice into pieces

Blanch chicken gizzards in a pot under boiling water

Open the pot and take it out, add shredded ginger, green onions, a little pepper, salt, soy sauce and cooking wine and marinate for 20 minutes

Cut celery into sections and set aside

Cut green and red pepper into small pieces and slice garlic

Chop your own pickled peppers, pickled ginger, and wild san pepper (if you don’t have pickled peppers, the yellow pickled wild san pepper sold outside will do)

Heat up the pan, add millet pepper and garlic slices and sauté until fragrant

When the garlic is fragrant, add the pickled pepper segments

When the seasonings are fragrant, add the marinated chicken gizzards

Add oyster sauce and soy sauce and stir-fry over high heat

Stir-fry over high heat for 2 minutes and then add celery and green pepper

Before serving, add appropriate amount of salt and chicken essence, and cook a little vinegar along the edge of the pot
