  1. Pick and wash the snow peas, peel and slice the yam, soak the black fungus and set aside.

  2. Boil water, blanch snow peas, yam and black fungus separately, rinse with cold water and set aside. (I just blanch the water together for convenience)

  3. Heat an appropriate amount of oil in a pot, add ginger and minced garlic and stir-fry until fragrant.

  4. First add the black fungus and carrot and stir-fry a few times.

  5. Then add the snow peas and stir-fry, and finally add the yam slices and stir-fry a few more times.

  6. Finally, add an appropriate amount of salt, sugar and chicken powder, stir-fry quickly and evenly.
